SALSA Standard FAQs

The SALSA standard is a food safety standard developed specifically for small food processing businesses who want to demonstrate that they operate to a recognised standard.

The standard was developed by 4 main groups:

  • The British Retail Consortium (BRC)
  • The Food and Drink Federation (FDF)
  • The British Hospitality Association (BHA)
  • The National Farmers Union (NFU)

What is SALSA Issue 4?

The standard is split into 4 main sections:

  • Prerequisite controls
  • HACCP & Management Systems
  • Documentation
  • Premises

Why would I need to be SALSA certificated?

In many cases, retailers, food service agents and restaurant chains will not approve a product without some form of certification.

Achieving a certification demonstrates that your business has all the necessary food safety systems to ensure the product is produced safely and efficiently.

How do I arrange a SALSA audit?

To begin the auditing process, you will need to register as a member of SALSA, this can be done via their website. You will then be assigned an auditor with whom you can organise your audit.

How long does an audit take?

On average, a SALSA audit will take just half a day, depending on the size and complexity of the site. The audit will be conducted by one auditor who you will need to accompany for the duration of the audit. At the end of the audit, the auditor will provide feedback on any non- conformities and work with you to develop a plan to resolve any non-conformities. You will be given 26 days to provide evidence that you’ve resolved all non-conformities.

How is the audit marked?

There is no grading system – you either pass or fail. Providing you resolve all your non-conformities reported in your audit, you will pass and receive your certification.

How much does an audit cost?

The cost of a SALSA membership and audit amounts to £550+ VAT.

How long will my certification be valid?

Your certificate will expire one year after you receive it. To ensure your certificate doesn’t expire, re-schedule your next audit up to 56 days before the anniversary of your audit.
